Hi Peter. I made the Jaguar from 12mm ply. It was a very white colour similar to pine.In fact I did not have 12mm as such but glued together some 3mm and 9mm to get the thickness.After you cut out the pieces you have to separate them out and then stain the different colours. Re-assembling is a bit of a mission as you have a tricky jigsaw to put together and is harder than you might think.
I used stains which are local to me in New Zealand. The colours would not mean anything to you. However if you are interested in this project I suggest that you read Neal Moore's book " Animal Portraits in Wood" He explains in detail the process and names the Minwax stains that he used..I mixed some stains and in other instances I sanded off a lot of the stain to get a lighter look.
I finished the jaguar with a semi-gloss water based varnish. The project is not especially hard and the result is well worth the effort. Good luck
