  • peanut butter pie recipe

    Here is the recipe for the peanut butter pie that I recently made for my son's 21st birthday. To me it was just a bit difficult but my aunt in PA sent me an easier one that I will also post...

    Ingredients

    1 1/2 cups crushed chocolate cookies
    1 cup peanut butter, in all
    1/4 pound cream cheese
    3/4 cup powdered sugar
    2 tablespoons milk
    2 tablespoons chopped peanuts
    2 3/4 cups heavy cream, in all
    6 ounces semi-sweet chocolate, chopped

    Directions

    Preheat oven to 350 degrees F. In a mixing bowl, combine the cookie crust with 1/4 cup of the peanut butter. Combine the mixture thoroughly and press into a 9-inch springform pan. Bake the crust for 8 to 10 minutes. In an electric mixer with a whip attachment, whip the cream cheese and sugar until smooth. Add the remaining peanut butter, milk and nuts and whip for 1 minute. Turn the peanut butter mixture into a mixing bowl. Whip 2 cups of the heavy cream and fold into the peanut butter mixture. Pour the filling into the prepared crust and refrigerate for 2 hours or until the pie is set. In a sauce pan, over medium heat, melt the chocolate with the remaining cream, stirring constantly, until the chocolate is completely melted. Remove from the heat and cool for 2 minutes, stirring constantly. Remove the pie from the springform pan and place on a wire rack over a baking sheet lined with parchment paper. Pour the chocolate topping over the pie, covering the top and sides completely. Refrigerate the pie for 2 hours or until the chocolate coating is set.

    A couple of notes...
    1. I bought a premade Oreo chocolate crust instead of making my own.

    2. Make sure if you use this recipe that you understand baking terms such as whipping, folding, etc.

    3. Not following this recipe exactly resulted in a dud for me the first time. Second time out I did exactly as instructed with good results.

    4. If you are not a choco-holic, go easy on the chocolate covering. You may want to drizzle a bit of the sauce over the pie rather than cover the whole pie.


    Now, here is a much easier recipe from one of my aunts in PA...

    this is a very easy peanut butter pie recipe.

    1 8 0z. pkg. cream cheese
    1 container cool whip
    1/2 cup of peanut butter (less if you feel it is to strong tasting for you)
    1/2 cup powdered sugar
    1 tsp. vanilla
    It should be thick when you are done w/it.
    1 graham cracker pie crust shell (or Oreo chocolate cookie pie shell)

    beat the cream cheese, peanut butter together, then add the cool whip and powdered sugar.

    pour in pie shell. put some chocolate crackel over the top or cut a choc. bar in pieces (like grated),

    chill and serve. very good and very easy to make. not as expensive as using whipped cream.

    I think I'll have to postpone making my pie until I get back home to the family since it would be too risky making one whilst I'm living on my own. I already have enough calories piling up on me as it is without another mountain of more beckoning to me from the fridge!

      They both sound decadent. I agree with Jim I need to wait at least until I have company en route, so I can share while they are here...and send home a slice with them.

        I know guys. Sharing is a wonderful thing, especially when it can help keep your waistline in check. I gave a whole one to my son and shared the other one with my dad. Still some left so I am taking some of it to my friend, Brian, tomorrow.
